40g Parmesan, grated
5 tbsp extra-virgin olive oil
2 tbsp lemon juice
1 tsp lemon zest, grated
Salt and black pepper
200g cherry tomatoes, halved
- Place the first four ingredients in a food processor and whizz to combine. Season to taste with salt and black pepper.
- Combine the rocket and tomatoes in a large bowl. Add enough dressing to coat the salad and toss to combine.
