- In the bowl of a food processor, combine 250g cups of the honeydew melon with the sugar and 60ml of the wine. Whizz until the mixture is smooth.
- Transfer the purée to a large pitcher. Stir in the remaining wine along with the tequila and brandy, if using. Add the kiwi slices, lime slices and the remaining melon. Cover and refrigerate for at least three hours.
- When ready to serve, gently stir in the soda water. Pour the mixture between serving glasses, ensuring a few pieces of fruit to each glass. Garnish with fresh mint sprigs, if desired.
