To serv
- Boil the potatoes, skin on, until cooked through but not falling apart, drain and leave to cool in the empty warm pot – this will help them dry out. Peel and gently mash the potato in a medium bowl.
- Add the egg, milk and salt and pepper to the potato and mix.
- Add the flour and knead in the bowl to what’s for dinner? special recipes create a soft dough. It should remain moist and slightly sticky to the hands. Add a little more flour if needed.
- Place on a lightly floured surface and shape into a circle the width of your pan.
- Heat a large frying pan, over medium heat with oil, when hot slide the dough carefully into the pan. Cook for 5-6 minutes.
- Once the bottom side is browned, flip the potato bread by gently sliding it onto a plate or a board, and turning this upside down onto the pan – it will not flip like a pancake. Fry the other side for a further 5-6 minutes, until fully cooked in the centre, turning a second time if needed.
- Slide the potato bread out of the pan onto a board, then top with a little butter and a sprinkle of salt.
- Serve hot and cut into wedges.
