Makes 4

4 slices brioche bread

4 tbsp orange liqueur

1 pineapple, cubed
4 passion fruits

200g whipped cream
50g desiccated coconut, toasted

  1. Cut the slices of brioche bread into cubes. Place in the bottoms of four glasses. Spoon one tablespoon of orange liqueur over the brioche in each glass.
  2. Add a few pieces of cubed pineapple to each glass. Slice the passion fruits in half and scoop the seeds over the pineapple.
  3. Divide the whipped cream amongst the glasses and sprinkle on desiccated coconut. 4 Chill in the fridge until ready to serve.
