  1. Preheat oven to 190 ̊C/170 ̊C fan/gas mark 5.
  2. Spread the nuts out on a baking tray and roast for 5-10 minutes or until golden brown. Leave to cool.
  3. Add both chocolates into a heatproof bowl and melt in the microwave in 30 second bursts until just melted.
  4. To a food processor, transfer the cooled nuts and whiz until finely chopped.
  5. Add the maple syrup and pulse. Add the melted chocolate, oil and vanilla and whiz until combined. If you want your spread even smoother, push through a fine sieve.
  6. Spoon into sterilised jars. This can harden after a while, so pop it in the microwave for a few seconds before use to bring it back to a spreadable consistency.
