- Preheat oven to 190 ̊C/170 ̊C fan/gas mark 5.
- Spread the nuts out on a baking tray and roast for 5-10 minutes or until golden brown. Leave to cool.
- Add both chocolates into a heatproof bowl and melt in the microwave in 30 second bursts until just melted.
- To a food processor, transfer the cooled nuts and whiz until finely chopped.
- Add the maple syrup and pulse. Add the melted chocolate, oil and vanilla and whiz until combined. If you want your spread even smoother, push through a fine sieve.
- Spoon into sterilised jars. This can harden after a while, so pop it in the microwave for a few seconds before use to bring it back to a spreadable consistency.
