  1. Turn the grill on to a high heat.
  2. In a large bowl, combine the grated Cheddar, Guinness, mustard, egg yolk, Worcestershire sauce, and some salt and pepper.
  3. Cut four thick slices of sourdough and grill until golden on one side. Flip the toasts over and spread thickly with the cheese and Guinness mixture.
  4. Place back under the grill for 2-3 minutes or until the cheese is golden-brown and bubbling. Serve immediately with some mixed leaves.
