1 small pineapple, cored and cut into 8 slices
4 tbsp brown sugar
¼ tsp cinnamon
4 scoops of vanilla ice cream
- Combine the pineapple slices, brown sugar and cinnamon in a sealable bag. Massage gently to combine. Set aside for five minutes.
- Preheat a griddle pan or barbecue to a medium-high heat. Remove the pineapple from the bag, reserving the juices in the bag.
- Cook the slices of pineapple on the griddle pan or barbecue for 3-4 minutes per side.
- Serve two slices per person, topped with a scoop of ice cream and drizzled with the reserved juices.
