- In a small bowl, combine the lime zest, juice and honey. Dip the cut side of each peach half into the lime mixture, then dust with some sugar and ginger. Reserve the rest of the lime sauce.
- Place the peaches, sugar side down, on the centre of the barbecue. Cook for 4-5 minutes or until golden brown. Remove from grill.
- Serve the peaches with the vanilla ice cream and drizzle with the remaining sauce.
