Green bean dip

Green bean dip
Serves 8
1 tbsp olive oil
250g shallots
100g cashews
100g green beans
1 tbsp lemon juice
Salt and black pepper

To serve
  1. Heat the oil in a frying pan over a medium-low heat. Sauté the shallots for a few minutes, stirring frequently, until nicely browned.
  2. Add the cooked shallots, cashews, green beans, lemon and salt and pepper to a food processor.
  3. Purée until smooth, scraping down the sides as needed. Transfer to a serving bowl and season to taste. Serve with crudités.
