To serve
- Heat the oil in a frying pan over a medium-low heat. Sauté the shallots for a few minutes, stirring frequently, until nicely browned.
- Add the cooked shallots, cashews, green beans, lemon and salt and pepper to a food processor.
- Purée until smooth, scraping down the sides as needed. Transfer to a serving bowl and season to taste. Serve with crudités.
