To serve:

  1. Heat a dry pan over a medium heat and toast the walnuts for 4-5 minutes, shaking the pan frequently. Set aside.
  2. Place the apples and caster sugar in a saucepan over a medium-high heat and cook until the sugar begins to darken.
  3. Add the butter and a splash of water and toss to coat the apples. Cook for 4-5 minutes, stirring often and adding a splash of water when necessary to prevent the caramel from catching. Stir in the toasted walnuts.
  4. When the apples are just tender, divide between two bowls and serve with some good vanilla ice cream.
