2 Granny Smith apples, peeled, cored and quartered
100g caster sugar
30g butter
60g walnuts
To serve:
Vanilla ice cream
- Heat a dry pan over a medium heat and toast the walnuts for 4-5 minutes, shaking the pan frequently. Set aside.
- Place the apples and caster sugar in a saucepan over a medium-high heat and cook until the sugar begins to darken.
- Add the butter and a splash of water and toss to coat the apples. Cook for 4-5 minutes, stirring often and adding a splash of water when necessary to prevent the caramel from catching. Stir in the toasted walnuts.
- When the apples are just tender, divide between two bowls and serve with some good vanilla ice cream.
