Ginger-Spiced Mojitos
Serves 8
8 limes, sliced
30g fresh mint leaves
1 tbsp light brown sugar
300ml whiskey
2L ginger beer, chilled
  1. In a pitcher, combine the limes, mint leaves and sugar and crush lightly with a wooden spoon or muddler.
  2. Add the whiskey and stir well.
  3. Fill the pitcher with ice, then top up with ginger beer.
  4. To serve, pour into glasses over ice and garnish with extra mint and sliced limes.
