Fruit & nut energy balls
Makes 12
110g pitted dates
100g blanched almonds
A pinch of sea salt
2 tbsp sultanas
Desiccated coconut, (optional)

1. Place the dates in a bowl, cover with warm water and allow to soak for 5-6 minutes. Drain well.
2. Combine the dates with the remaining ingredients in a food processor. Whizz until a soft dough forms, adding a splash of water (if needed) to combine.
3. Form the dough into bite-sized balls or bars. Roll in coconut, if desired. Store in the fridge or freezer.
