100g caster sugar
100g butter, softened
100g self-raising flour
Zest of 1 lemon
½ tsp vanilla extract
4 tbsp lemon curd
Ice cream or whipped cream
- In a bowl, beat together the sugar, butter, flour, eggs, lemon zest and vanilla extract until creamy. Transfer to a microwave-proof baking dish.
- Microwave on high for 1½ minutes, turning halfway through, until risen and set. Allow to stand for one minute. Place the lemon curd in a small jug and microwave for 30 seconds, then stir until smooth.
- Divide the pudding between bowls and pour over the melted curd. Serve with ice cream or whipped cream.
