  1. Preheat the oven to 200°C/180°C fan/ gas mark 6.
  2. On a tray lined with baking parchment, toss the almonds in the oil and a pinch of salt and bake for 10 minutes or until golden brown, tossing the tray halfway through baking time and taking care not to burn the almonds. Remove from the oven and allow to cool.
  3. On a board or serving platter, arrange the nuts, slices of Manchego with a drizzle of honey and the sliced ham.
