Easy Mexican burrito

Why not try this easy Mexican burrito, which uses a healthy wholemeal wrap.

Makes 1

2 tbsp tomato salsa
1 wholemeal wrap
75g of sliced beef or chicken/turkey
1 tomato, chopped
25g cheddar cheese, grated
1 scallion, chopped

  1. Spread the salsa down the centre of the wholegrain wrap. Top with sliced beef, lettuce, tomatoes, Cheddar and scallions.
  2. Fold the shorter sides over the centre of the filling, then fold one of the longer sides over the filling. Roll the burrito over to secure, then pack into a lunchbox.
