  1. Preheat the oven to 180 ̊C/160 ̊C fan/gas mark 4.
  2. In a jug, whisk together the eggs, milk, sugar and salt. Divide amongst four ungreased ramekins; sprinkle over the cinnamon and grate over a little fresh nutmeg, if desired.
  3. Place the ramekins in a baking tin and pour hot water around them to a depth of 2cm. Bake, uncovered for 50-55 minutes until a knife inserted in the centre comes out clean. Serve warm or transfer the ramekins to a wire rack to cool.
