For the coronation sauce
To assemble
- To make the coronation sauce, mix the mayonnaise, curry powder, mango chutney and sultanas together. Season with black pepper.
- Allow to sit for at least 30 minutes to allow the spices to develop.
- To assemble the sandwiches, add the shredded leftover turkey to the sauce and stir to coat.
- Place the lettuce onto two slices of bread, and top with coronation turkey. Add pickled cucumber, red onion and a scattering of toasted almonds. Place the lids on top and serve immediately.
