280g plain Greek yoghurt
2 tbsp coriander, finely chopped
1 tbsp mint, finely chopped
Zest of 1 lemon
2 tsp lemon juice
½ tsp ground cumin
1 cucumber, peeled, halved lengthwise, deseeded and finely chopped
Salt and black pepper
