  1. In a medium size pan over medium heat cook the apples and maple syrup, stirring occasionally, for 5 minutes until the apples are nice and soft but not breaking down and the maple syrup has reduced. Set aside.
  2. Mix the crème fraiche with half the chives and salt and pepper.
  3. Cook the Clonakilty Black Pudding slices in a medium pan with oil over medium heat, when hot add the pudding and cook for 4-5 minutes per side until crispy and cooked through.
  4. Divide and spread the crème fraiche over the crumpets. To assemble top each crumpet with a slice of pudding and 2-3 pieces apples and a sprinkle of chives.

Top tip: To make a delicious veggie version of this starter simply use Clonakilty Veggie Pudding in place of black pudding
