- In a medium size pan over medium heat cook the apples and maple syrup, stirring occasionally, for 5 minutes until the apples are nice and soft but not breaking down and the maple syrup has reduced. Set aside.
- Mix the crème fraiche with half the chives and salt and pepper.
- Cook the Clonakilty Black Pudding slices in a medium pan with oil over medium heat, when hot add the pudding and cook for 4-5 minutes per side until crispy and cooked through.
- Divide and spread the crème fraiche over the crumpets. To assemble top each crumpet with a slice of pudding and 2-3 pieces apples and a sprinkle of chives.
Top tip: To make a delicious veggie version of this starter simply use Clonakilty Veggie Pudding in place of black pudding
