- Preheat oven to 220°C/200°C fan/gas mark 7.
- On a floured surface, divide pizza dough into two pieces. Stretch and roll each piece of dough into a long rectangle, then cut dough into 5cm squares (you’ll need approx. 16 total) cover with a damp cloth or foil and leave to rest for 15-20 minutes.
- Line a large baking sheet with parchment paper. Cut the mozzarella into 15 approx. 3cm cubes and set aside.
- To assemble; wrap a dough square around each piece of mozzarella, forming a tightly sealed ball. Place 15 balls seam-side down on the baking sheet in the shape of a Christmas tree (they should be touching) and two smaller balls at the base of the tree. Brush the egg wash on dough balls and bake until golden, for 15 to 20 minutes.
- Meanwhile, whisk together melted butter, Parmesan, and herbs. Brush on baked pizza balls. Serve warm with delicious YR Tomato relish for dipping and enjoy!
