For 1 x 5kg ham


50g wholegrain mustard
25g light brown sugar
100g panko breadcrumbs
2 tbsp thyme leaves


  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4.
  2. In a bowl, mix together the mustard and brown sugar. Spread the mixture over the ham on all sides.
  3. Mix together the panko breadcrumbs and the thyme. Press the breadcrumbs into the top of the ham, pressing them on so they stick to the mustard.
  4. Bake the ham for 40-45 minutes until golden brown.
  5. Turn the oven to 220˚C/200˚C/gas mark 7 and cook for a final 20 minutes without opening the oven.
  6. Once the ham is baked, transfer to a plate, tent loosely with foil and allow to rest for 20 minutes before serving.
