300g silken tofu
100g sugar-free dark chocolate
1 tsp vanilla bean paste
2 tbsp maple syrup
Dark chocolate shards
- Take tofu out of the fridge and allow to come to room temperature.
- Melt chocolate in the microwave at 30 second intervals or over a double boiler. Once it is melted set aside to cool.
- Place maple syrup, tofu and vanilla in a jug and blend with a hand blender. Process until smooth.
- Pipe or place into serving bowls and refrigerate for 30 minutes before serving with fresh berries, mint and chocolate shards.
