Cashew cookies

Cashew cookies
Makes 12-14
250g cashew butter
60g oat flour, (regular oats whizzed in a food processor until smooth)
2 tbsp plain flour
65ml maple syrup
1 large egg
30g cashews, chopped

1. Preheat the oven to 170 ̊C/150 ̊C fan/gas mark 3.
2. In a large bowl, stir together all of the ingredients. Scoop out level tablespoonfuls and roll into balls. Place the balls on ungreased baking trays and flatten the tops slightly with the tines of a fork.
3. Bake for 15 minutes or until golden brown in colour. Remove to a wire rack to cool.
