1 wholemeal sub roll
2 tsp of chilli mayonnaise (or spread of choice)
Handful of lettuce leaves (or leaves of choice)
1 tomato, sliced
1⁄2 red pepper, deseeded and sliced
75g of cajun-spiced chicken (or lean meat of choice)
- Slice the sub roll and spread with chilli mayonnaise.
- Layer in the fresh lettuce, tomato and red pepper slices. Top with the Cajun-spiced chicken (or whichever meat you prefer). Slice in half and pack into a lunchbox.
