Cajun chicken sub roll

This cajun chicken sub roll is super delicious and full of protein.

Makes 1

1 wholemeal sub roll
2 tsp of chilli mayonnaise (or spread of choice)
Handful of lettuce leaves (or leaves of choice)
1 tomato, sliced
1⁄2 red pepper, deseeded and sliced
75g of cajun-spiced chicken (or lean meat of choice)

  1. Slice the sub roll and spread with chilli mayonnaise.
  2. Layer in the fresh lettuce, tomato and red pepper slices. Top with the Cajun-spiced chicken (or whichever meat you prefer). Slice in half and pack into a lunchbox.
