- To make the flax eggs, mix the flaxseed meal together with the water and rest in the fridge for 15 minutes until gloopy.
- Combine the flax eggs with the remaining ingredients in a blender or food processor and blend until combined.
- Heat a waffle iron and coat with half a teaspoon of oil. Pour some of the mixture in and cook for one minute per waffle.
- Serve with dark chocolate chips, coconut yoghurt, fresh berries and maple syrup.
Note: Melted coconut oil can be used as an alternative to vegetable oil, if you wish.
