Best_Salad_Sandwich Easy Food

Makes 2

4 slices of wholemeal seeded bread
2 tsp mayonnaise
2 tsp butter
2 ripe tomatoes, thinly sliced (optional)
1⁄2 a small red onion, sliced
Salt and black pepper (to taste)
1 cooked beetroot, sliced
2 radishes, sliced
4 leaves of butter head lettuce

Optional additions:
2 hard-boiled eggs, sliced
50-75g meat or fish of choice

  1. Spread mayonnaise over two of the bread slices and butter over the others.
  2. Layer the tomato (if using) and onion onto the buttered slices, then season with salt and black pepper.
  3. Add the beetroot, radishes, coleslaw and hard boiled eggs.
  4. Top with the lettuce, then sandwich together with the remaining bread. Press down lightly, slice and pack into a lunchbox.
