4 slices of wholemeal seeded bread
2 tsp mayonnaise
2 tsp butter
2 ripe tomatoes, thinly sliced (optional)
1⁄2 a small red onion, sliced
Salt and black pepper (to taste)
1 cooked beetroot, sliced
2 radishes, sliced
4 leaves of butter head lettuce
2 hard-boiled eggs, sliced
50-75g meat or fish of choice
- Spread mayonnaise over two of the bread slices and butter over the others.
- Layer the tomato (if using) and onion onto the buttered slices, then season with salt and black pepper.
- Add the beetroot, radishes, coleslaw and hard boiled eggs.
- Top with the lettuce, then sandwich together with the remaining bread. Press down lightly, slice and pack into a lunchbox.
