Combine 200g sugar and 240ml water in a small saucepan. Cook over a low heat, stirring, until the sugar has completely dissolved.
TOP TIP
The simple syrup can be stored in a sealed container in the fridge for up to one month, so if you have plans for more summer cocktails you may like to make a large batch all at once!
