300g strawberries, rinsed, hulled and sliced
3 tbsp sugar
1½ tbsp balsamic vinegar, plus extra to serve
60g Gorgonzola, crumbled
40g walnuts, roughly chopped
- Place the sliced berries in a bowl and sprinkle with the sugar and balsamic vinegar, tossing gently to coat. Allow the berries to sit for about 15 minutes until juicy.
- Add 4-5 grinds of black pepper and toss to coat. Allow to blend about five minutes more before serving.
- Serve on a bed of mixed leaves with crumbled Gorgonzola and the chopped walnuts on top. Drizzle with extra balsamic vinegar to serve.
