  1. Preheat the grill to high and cook the rashers until crispy.
  2. Lightly toast both slices of bread and spread some of the mayonnaise evenly on each slice.
  3. Take two slices, mayo side up, and layer with the lettuce, tomato, onion, bacon and grated cheese. Pop under the grill for 2-3 minutes until the cheese melts. Add the avocado slices and top with the remaining slices of bread.
  4. Close with the other slice of bread and dig in while it's still warm.
