  1. Line a 20 x 20cm square baking tray with baking parchment.
  2. Place the dates, apricots, chia seeds, cinnamon, ginger, oats and protein powder in a food processor, and blitz until the mixture is combined, stopping to scrape down the sides a few times, if needed.
  3. Break up the mixture slightly with a spatula, add the pumpkin seeds and pulse 2-3 times. Remove from the food processor and add to the baking tray, pressing down slightly. To help flatten the mixture, cover the top with baking parchment and press an equal-sized baking tray down on top.
  4. Refrigerate for 30-45 minutes, then slice into bars or squares.
