  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4. Grease and line a square baking tin (20 x 20cm) with baking parchment.
  2. Peel, core and thinly slice the apples, then squeeze over the lemon juice. Set aside.
  3. Put the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Add in the apples and stir to combine. Transfer to the prepared tin.
  4. Bake for 45-50 minutes until golden and springy to the touch. Leave to cool for 10 minutes, then turn out of the tin and remove the paper. Cut into nine squares and enjoy.
