- In a medium bowl, stir together the flour, baking powder, sugar, and salt. In a separate small bowl, whisk together the milk, egg, and nutmeg until well blended. Gradually add the milk mixture to the dry ingredients, stirring in gently with a wooden spoon until it forms a smooth, thick batter. Fold in the blueberries.
- In a small, deep pan, heat 5-6cm of vegetable oil over a medium-high heat. The batter is hot enough when a tiny blob of batter dropped in sizzles.
- Drop heaped tablespoons of the batter into the oil, 3-4 at a time, and fry until golden brown on one side. Turn and brown the other side, then remove to a wire rack and dust generously with icing sugar. Repeat with the remaining batter. Serve hot.
