Pinch of salt
180 g dates, pitted
1 tsp vanilla extract
120 g unsweetened cocoa powder
1 Place the walnuts and salt in a food processor and whizz until finely ground.
2 Add the remaining ingredients and whizz until combined. With the motor still running, add a few drops of water at a time until the mixture comes together.
3 Using a spatula, transfer the mixture into a bowl. Roll into small round balls, using your hands. Store in an airtight container in the fridge for up to one week.
