Makes one medium bowl
- 4 medium tomatoes, diced
- 2 onions, finely chopped
- 2 green chillies, deseeded and chopped (leave some seeds in for more heat if desired)
- 4 tbsp fresh coriander, finely chopped
- 1 garlic clove, crushed
- Juice of 1 lime
- Salt and black pepper
- In a medium bowl, combine the tomatoes, onions, chilli, coriander and garlic. Season with lime juice, salt and pepper. Stir until evenly distributed.
- Place in the fridge for at least 30 minutes to let the flavours come together, then allow to come to room temperature before serving.
