2 onions, finely chopped
2 green chillies, deseeded and chopped (leave some seeds in for more heat if desired)
4 tbsp fresh coriander, finely chopped
1 garlic clove, crushed
Juice of 1 lime
Salt and black pepper
1 In a medium bowl, combine the tomatoes, onions, chilli, coriander and garlic. Season with lime juice, salt and pepper. Stir until evenly distributed.
2 Place in the fridge for at least 30 minutes to let the flavours come together, then allow to come to room temperature before serving.
