  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4 and coat a 23cm square baking tray with cooking spray, or brush with vegetable oil. 
  2. In a food processor, combine the oatmeal, skimmed milk powder, sunflower seeds, flour, maple syrup and eggs.
  3. Process for 10 seconds until the mixture is smooth. Stir in the cranberries, apricots and almonds, then pour into the prepared baking tray. Sprinkle with coconut flakes.
  4. Bake for 20-25 minutes or until the edges are golden and the centre is set.
