  1. Melt the butter in a large pan over a medium heat. Add the onion, season with salt and black pepper and cook for 6-8 minutes until softened.
  2. Add the cabbage and potato and cook for 3-4 minutes. Pour in the stock, add the bay leaves and bring to a boil. Cover with a lid, reduce the heat to medium-low and simmer for about 30 minutes or until the vegetables are tender. Remove the bay leaves.
  3. Use a stick blender to whizz the soup until smooth. Stir in the cream and bacon. Season with salt and pepper and heat through to serve.
