BBQ chicken sweet potatoes

Serves 4
4small sweet potatoes
40ml olive oil
250g chicken fillets
100g barbecue sauce
40g Cheddar , grated
2 spring onions , chopped
  1. Preheat the oven to 200˚C/180˚C fan/gas mark 6 and use a fork to poke holes into the sweet potatoes. Brush half of the oil over the potatoes and roast for 30 minutes.
  2. Brush the chicken with the remaining oil and season with salt and pepper. Add to the tray and roast in the oven for 20 minutes.
  3. Brush the barbecue sauce over the chicken and roast for another 10 minutes until the chicken is cooked through and the potatoes are tender.
  4. Remove from the oven and leave to rest for five minutes. Slice the chicken into small pieces, or pull apart with two forks.
  5. Slice the potatoes down the centre, season with salt and pepper and fill with the Cheddar.
  6. Top with the chicken and spring onions and serve hot.
