Brady Family 7 Day Dry Aged is the ultimate celebration of craft. We believe it takes time to make something extra special. Brady Family Dry Aged is cured for 3 days using our unique recipe, before being slowly dry-aged for a further 7 days in our temperature-controlled ageing chamber to help concentrate the delicious flavour.
It is then gently baked by our Master Butcher, Pat Creighton, before hand-glazing it with a wild garlic and pink peppercorn glaze for a lightly sweetened yet earthy flavour which makes it the perfect complement to both hard and soft cheese boards.
