As an advocate of sustainable meat, I’m thrilled to see more food outlets choosing to work with free range chicken. I tried Mad Egg on Millennium Walk a few weeks ago, and am still talking about the “Heartbreaker” sandwich that I savaged: a soft toasted bun housing perfect crunchy-yet-tender fried chicken, hot sauce and pickles, all lavishly drenched in a smooth, unctuous cheese sauce. Messy? Absolutely, but a sheer joy to consume. Editor Caroline is a devoted fan of the “Honey Baby,” the version topped with cinnamon rock, honey butter, candied streaky bacon, pickles and lettuce.
Founded by Conor Sheridan and Stephen O’Reilly in March 2018, Mad Egg has already proved a hit in Dublin with two city centre locations. Their not-so-secret weapon is their process of tea brining the chicken for 48 hours to maximess tenderness, then double dredging in buttermilk and coating in their house-seasoned mix.
The latest news on the Mad Egg front is that it’s set to open a third branch at Dundrum Town Centre, serving the same signature dishes. Due to open this summer, the popular eatery is part of the wider transformation of Dundrum Town Centre which will introduce a greater variety and choice in food, leisure and entertainment.
The new Mad Egg restaurant, including a terrace, will be located in the Pembroke District, adjacent to the Pembroke Square development project which is set to reinvigorate a currently underutilised part of the centre, creating a vibrant new hub for aspirational dining and leisure concepts. Restaurants already signed up for the scheme include Fallon & Byrne’s new specialty food hall, LEON, PF Chang’s and J2 Sushi.
Dundrum Town Centre has also confirmed that Press Up Entertainment Group — one of Ireland’s leading leisure and hospitality brands — will open Stella Bowl, a new eight-lane bowling alley as part of the new dining and entertainment destination. The bowling alley will include a new cocktail bar and diner concept.

This is great news for regular visitors to Dundrum Town Centre. Honestly, the more convenient it is for me to access those sexy fried chicken sandwiches, the more I’ll be living my best life.
