    January is synonymous with healthy changes and new beginnings. Whether you’re choosing to make it permanent or just for this month as part of Veganuary, more and more people opt for plant-based foods in their daily lives — also when they’re ordering food from their favourite fast food joint.

    Mexican burrito bar Boojum has unveiled its plans to launch a new 100% plant-based dish this January. The limited-time-only offering is a tasty sweet potato and lentil dish that’s not only packed with nutritional goodness but will also have you drooling!

    It’s served with pickled onions, guacamole and vegan sour cream — a superfood dish that delivers on the full flavour Boojum is famous for.

    Boojum marketing manager Paul McCullagh said that this food store always listens to its customers’ feedback and monitors industry trends.

    “(…) it’s very clear that the demand for plant-based vegan meal options is increasing,” he said.

    “We know within our own business, vegetarian meals are now our second most ordered dish. So continued menu experimentation and expansion, such as this new sweet potato and lentil offering is vital for us to stay relevant and continue to satisfy customers.”

    You can grab this mouthwatering meat-free option as a burrito, bowl or taco from Tuesday (7th January) in any of the 18 Boojum stores across Ireland.
