We’re dying to try these new ready-to-bake chocolate chip cookies, made in Dublin.
After three years studying business and entrepreneurship in Sydney, former Connacht rugby player Dave McSharry spotted a gap in the market for the premium cookies and cookie dough that are a staple treat in homes around the world, and began developing his own recipe during the first lockdown in 2020.
Six months later, Hot Chip Dublin’s rolls of bake-at-home dough are available online and in over 35 select Dublin locations including Avoca, Fallon and Byrne and Mortons, with ready-to-eat cookies in a number of Dublin cafés. The giant cookie’s decadent taste is achieved using Irish butter and a generous helping of Belgian chocolate chips, creating a dough that produces a crisp-edged cookie with a soft, melting cake-like centre.
The range is expanding to cater for every craving, adding flavours such as S’mores Cookie Dough and Mixed Chocolate Chip. Choosing a flavour may be the hardest part. Each roll comes wrapped in non-stick baking parchment; simply slice the roll into four rounds for giant cookies or 12 for smaller ones, place on the parchment on a baking tray and pop in the oven.
Hand-rolled and free from artificial colours and added preservatives, Hot Chip Dublin Cookies and Cookie Dough Rolls are available in select Dublin cafés and premium grocers as well as online.
