The Tomahawk is a steak stunner: it features a thick chunk of ribeye at one end and usually includes at least 6-8 inches of bone handle — Fred Flintstone would certainly approve. This ribeye cut weighs a whopping 800g, is butchered by hand and matured for a minimum of 21 days to ensure a juicy and tender cut.
This is one steak that is perfect for sharing; we would love to serve this up on a huge wooden board and slice right at the table for maximum entertaining points! As this is a thick cut of steak, we’d recommend going for a reverse-sear cooking method: season the steak well, then cook it low and slow over indirect heat (if cooking on the barbecue) for about 20-30 minutes, until the internal temperature reaches 55˚C. Then, sear it over high heat on all sides until nice and browned. Leave to rest for 5-10 minutes before slicing. If you’re cooking this indoors, sear the steak first, then finish it in a moderate oven until the internal temperature reaches 55˚C.
