Sage is native to the northern Mediterranean coast. Sage has long, narrow, fuzzy leaves, and a peppery flavour with hints of lemon and mint. Sage is fantastic in stuffing, and works especially well with pork dishes. Be careful not to overdo it, as its strong flavour can quickly overpower a dish.

Sage was one of several herbs used to protect against the Black Death in 14th century Europe. The herb was also used to treat a wide range of health problems, including rheumatism, digestive problems, fevers, liver disease and epilepsy.
