The Dylan Hotel, Dublin’s leafy south city-centre boutique hotel, has just re-opened its door after a complete design makeover of restaurant, bar, terrace, and private resident’s cocktail room.
The welcoming space of the Dylan Hotel boosts marble parquet wood flooring and handcrafted piece of furniture created by Irish furniture maker. The lobby features forest green furniture, along with original Max Ingrand mid-century glass lighting fixtures. Also the bar has a fresh new design: walnut and burr elm paneling and soft lighting to create atmospheric silhouettes.
Pieces of artwork adorn the Dylan Bar while the restaurant, The Eddison, offers two terraces and a live installation hanging from the ceiling. The menu of the restaurant celebrates finest Irish seasonal produce, and offers breakfast, lunch and dinner, as well as late night snacks. The Eddison’s menu changes monthly to showcase the seasonal produce at its best, with special emphasis on vegetables, including warm salad of sprouting broccoli, and carrot Wellington. The hotel’s hidden gem is The Ruby Room: a cocktail bar serving a range of cocktails created by the hotel’s mixology team. The Ruby Room features seating for 30 guests, with a partially covered terrace area that can be enjoyed all year round.
