Home appliance manufacturer NEFF has teamed up with The Irish Times to produce a festive cooking content series featuring chef and brand ambassador Derry Clarke, who will share his top tips and favourite recipes for a sumptuous festive menu this Christmas.
Ireland has always been a nation of food lovers, and never has this been more apparent than during 2020. Our Covid-19 lockdowns saw huge numbers of people experimenting with new recipes and food and drink trends at home — from the Dalgona whipped coffee and the mass baking of banana bread to Instagram cook-alongs and rumoured shortages of flour.
As Ireland emerges from its second lockdown, the nation is in the mood for a little celebrating, and what better way to mark the occasion than creating a delicious traditional Christmas menu to enjoy with family at home? With the festive period likely to look a little different this year, Derry Clarke has created a bespoke and achievable three-course menu designed to take the stress out of cooking on Christmas Day.
Derry Clarke says, “After the challenging year we’ve all had, this Christmas will be very much about indulgence in my household, and I’m sure in many others too. I’m delighted to team up with NEFF and The Irish Times to produce a menu of traditional festive favourites with my own twist. I’ll be passing on my tips for taking the stress out of the day, from dishes and sides you can prepare in advance, to how long you should rest your cooked turkey, to chilling your wine outside to free up fridge space! I hope it will provide inspiration for a delicious Christmas meal for everyone, especially the cooks.”
During the three-part series, Derry will showcase the preparation involved in creating the perfect starter, main course, and dessert for the big day.
- The first episode will see Derry create a cured salmon starter, complete with beetroot, cucumber, yoghurt, dill oil and walnuts.
- In the second episode, Derry will turn his hand to the main event, with a delicious roast butter-basted turkey and honey-glazed ham, accompanied by orange, sage and apricot stuffing.
- Mouth-watering dessert creations will be the focus of the third and final episode, with Derry showing viewers how to make a decadent chocolate and raspberry tart, and how to flambé their traditional Christmas pudding.
- Sallyanne Clarke will join Derry to showcase the ideal wines to pair with each course.

This unique three-part cooking series will be viewable here in the lead up to Christmas. The first and second episodes are now live, to be followed by the third episode on December 18th. A special cooking feature and interview with Derry will appear in the Irish Times Magazine on December 19th.
