    11. Eating Ireland

    Deputy Editor Jocelyn has been on a culinary journey to Ireland’s wild Atlantic coast for this month’s edition of Eat Ireland, finding new ways to celebrate our heritage by cooking with seaweed. We’ve used this dillisk butter on a lovely piece of lemon sole, but it’s also gorgeous with roast chicken, fresh bread, baked potatoes or tossed through pasta.
