This month’s guest editor is none other than Italian chef and Jamie Oliver’s mentor, Gennaro Contaldo! We’re very much here for Gennaro’s infectious love of cooking and eating, and his gorgeous Italian recipes are sure to put a smile on your face just as they did ours.
2. Speaking of Italy…
We’ve been going all out with Italian food this issue, from getting pasta perfect every time to cooking authentic regional recipes. Whether it’s a quick dinner like the gorgeous garlic and chilli prawn pasta on our cover, mastering a simple but delicious traditional sauce or taking on a fun, foodie weekend project like our arancini, you’ll want to crack open that bottle of vino and savour every bite.
3. La dolce vita
Just when you think you’re really and truly full, the dolci appear with some coffee and you magically find room. Our beautiful Italian desserts went down a treat in the Test Kitchen, and we’re willing to bet they’ll do the same in your house.
4. In the garden
Speaking of desserts, we love when rhubarb comes back into season, and this year we’ve pulled together this lovely crumble to celebrate. Sweet strawberries make a great match for rhubarb’s tartness. Pass the custard?
5. Stir crazy
Our butcher pal Michael Fleming has been saving time this month with quick-fix meal options, sharing which cuts are best for fast prep and which ones to keep for the slow cooker. We’ve got a tasty sticky pork stir-fry recipe that’ll help you master this quick cooking method once and for all.
6. Seize the season
Asparagus is another early summer source of excitement for us; since it has such a short season here in Ireland, we like to cook with as much of it as we can. This tasty asparagus loaf marries those gorgeous green spears with ham, cheese, sun-dried tomatoes and a hint of mustard — simple, yet delicious.
7. Feeling blue
You may be aware by now that Recipe Editor Jocelyn has a deep obsession with all things dairy, especially cheese. This issue, she’s been chatting to cheesemaker John Hempenstall about his Wicklow Farmhouse Cheeses, and falling heads over heels for his oh-so-creamy Wicklow Blue.
8. Meringue magic
Baking whiz Shannon has been — literally — whipping up some truly stunning meringue creations and sharing her top tips for getting yours right, whether you’re making the French, Swiss or Italian variety. This lemon meringue tart is just a taster.
9. Free (from) and easy
Coeliac Awareness Week runs from May 13th – 19th this year, so we’ve been hopping on board with loads of cooking and baking tips. Nutritionist Sarah Keogh breaks down the facts about coeliac disease; gluten-free travel writer Thomas Breathnach checks out the best staycation options around the country for those eating sans gluten; and we give advice for those transitioning to a gluten-free diet and explain why carbs are still important. Hosting a dinner party for someone who can’t eat gluten? Our easy three-course dinner menu (featuring the pork belly, below) will blow them away.
10. Everyday eating
In between all of these dinner parties and Italian cook-offs, we still need to get dinner on the table and — as always — we’ve got those midweek evenings at home covered. Kids and grown-ups alike will love this homemade popcorn chicken.
