Ingredients
200 g plain natural yoghurt
1 small garlic clove, crushed
1 small handful of chopped mint
1 tbsp olive oil
0 Salt and black pepper
2 wholemeal tortilla wraps
1 200g packet of Green Giant Fresh Crunchable Bite Sized Cucumbersm halved lengthwise
0 Green Giant Fresh Baby Spinach Leaves
200 g Feta, crumbled
0 Red onion, thinly sliced, optional
0 Cooked shredded chicken or cooked flaked salmon, optional
Method

1            Combine all the mint yoghurt ingredients in a mixing bowl and stir well.

2            Spread half of the yoghurt onto each wrap. Divide the cucumbers, spinach, Feta and red onion (if using) between the two wraps. Top with cooked shredded chicken or flaked salmon, if desired, and roll up tightly.

3            Cut the wrap in half, wrap each half tightly in cling film and store in the fridge until needed.
